Banana Coconut Mini Muffins




Banana Coconut Mini Muffins are high in protein and feature healthy coconut oil. Coconut oil is great for the heart, weight loss, digestion, and many other benefits. (If you don’t have coconut oil on hand, butter or vegetable oil will work, too.)

What I like about mini muffins is they are very quick to bake–only 12 minutes in the oven–and take very little prep time. Perfect for busy weekday mornings!

Banana Coconut Mini Muffins

Makes: 24 mini muffins

  • 1 cup whole wheat flour
  • 1/2 cup soy flour
  • 1/2 cup skim milk powder
  • 1/4 cup shredded unsweetened coconut
  • 1 tsp baking soda
  • 1/4 tsp pumpkin pie spice
  • 1/2 tsp sea salt
  • 1/4 cup coconut oil (or butter)
  • 1/2 cup unsweetened applesauce
  • 2 ripe bananas
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • extra coconut to sprinkle on top
  1. Mix the flour, soy flour, milk powder, coconut, baking soda, pumpkin pie spice, and salt in a large mixing bowl.
  2. Heat the coconut oil in a small saucepan over low heat until completely melted. Remove from the heat and set aside.
  3. In a large bowl, mash the bananas. Stir in the applesauce, brown sugar, eggs, and vanilla. Add the melted coconut oil.
  4. Gradually stir the dry mixture into the wet. Mix until just combined.
  5. Spoon the batter into a well-greased muffin tin and sprinkle extra coconut shreds on top. Bake at 375F for 12 minutes.
  6. Remove from the heat and let cool for about 5 minutes before removing from the pan. Cool on a wire rack.

I served these to my 4-year-old son with extra coconut shreds. He topped each bite with extra coconut, and had a great time eating. I packed an extra one in his lunch.

Serve these with a smoothie and nut butter.
